This month's recipe pairs a salty pretzel crust with rich dreamy cream cheese, topped with the tart zing of strawberries to round out this perfect symphony of flavors. Light and fruity desserts are a great pick for sweltering summer days, and nothing beats the refreshing taste of fresh-picked strawberries.
Not a strawberry fan? This recipe lends well to experimentation. Try swapping strawberries (and the Jell-O flavor) for blueberries or blackberries. And bonus: this dessert is kid friendly and perfectly in vogue at barbeques and summer potlucks. Whip up this recipe for your Fourth of July bash and don't be surprised if you hear, “Fireworks, schmireworks—I'm going back inside to get another one of those yummy pretzel thingees.”
Lisa’s Awesome Pretzel Jell-O
Spray a 13”x 9” Pyrex dish with
PAM CRUST:
- 2 cups light rolled pretzels 1 cup melted butter (2 cubes) 3 tbsp sugar Combine and bake in an oven at 400 degrees for 10 minutes.
- When crust is completely cooled:
CHEESE LAYER:
- 8 oz cream cheese 2/3 cup sugar 2 cups Cool Whip Cream together cream cheese and sugar with mixer.
- Fold in Cool Whip and spread on cooled pretzel. JELL-O: 1 package (6 oz) strawberry Jell-0 2 cups boiling water 2 packages (10 oz) frozen strawberries (don’t defrost beforehand)
- Mix together Jell-O and water and, when dissolved, add strawberries.
- When Jell-O begins to gel, gently pour on top of Cool Whip layer and refrigerate overnight.
